Job Description

• Assists the Production Chef in all matters related to the operation of the Central Kitchen (including dim sum production) and leads the Central Kitchen team to achieve production goals and produce safe and consistent quality products, while ensuring optimal use of resources and controlling overall costs.

• Supervises and works with the kitchen team to produce high quality food at all times in accordance with menu specifications while adhering to the stipulated time limits.

• Assists production chefs with ordering and menu planning.

• Responsible for the control and preservation of food and confectionery materials prepared for production, in compliance with all applicable hygiene, health and personal hygiene standards.

• Always prepare food products for production (including snack buns) in accordance with established specification requirements and procedures, menu recipes, and presentation instructions.

• Responsible for day-to-day paperwork related to orders and work with the purchasing department to assess the arrival of orders and future product demand to prevent missed orders and over-ordering.

• Manage raw material costing and procurement to ensure costs are within budget.

• Ensure that the temperature is properly recorded and monitored on a daily basis.

• Ensure that the entire production area is clean and tidy at all times.

• Accept assigned project work to develop food production and management skills.

• The kitchen always adheres to "Halal Certified" cooking standards.

• Ensure that all kitchen equipment is handled correctly at all times.

• Assume all duties normally assigned to the Production Chef in their absence.

• Assists in the preparation of employee meals.

• Any other appropriate duties and responsibilities assigned.

Job Requirements

• At least 2 years of working experience in Chinese kitchen.

• Be proficient in making all kinds of dim sum buns.

• Passion for food and a keen eye for detail.

• Ability to work under pressure and smoothly in a fast-paced environment.

• Ability to be a good team player.
